Boletus Edulis are probably the most important edible wild fungi; widely used in Europe, especially in Italy where they are known as porcini. A very versatile mushroom which readily imparted its exquisite flavour to every dish. Ideal for use with sauces, stews, soups, pasta, meat, fish, eggs and rice.
Dried mushrooms should be soaked in warm water for about 20 minutes before being cooked. This water, once strained, can be used as a mushroom stock for a more intense flavour. Cook the mushrooms thoroughly before eating.
